How do you stop your karahi from going watery at home?

Mine always ends up soupy. Restaurant karahi is thick and clings to the meat, mine looks like a curry.

Things I've tried: less tomato, more time on high heat, draining the tomatoes first. Slightly better but still not there.

Is it the heat level? Home stoves just can't match a commercial burner?
