Unpopular opinion: Lahore's paye are better than its nihari

Everyone talks about nihari but I think paye is the more skilled dish. Harder to get right, and when it's done properly the texture is unmatched.

Nihari is more forgiving. A mediocre nihari is still edible. A mediocre paye is a disaster.
